At "Nagasakido", castella is researched everyday so that all ingredients all blend harmoniously into perfection. This accomplished castellla shop won the National Confectionary Contest in 1959, received Prime Minister's Award in 1968, and welcomed Pope John Paul II in 1981 during his Nagasaki visit.

Bunmei Main Shop is very particular about the ingredients inside its moist and flavorful castella. From its cooperation with farms to develop the Nagasaki eggs to its commitment to use starch syrup from Kyushu area as well as Nagasaki castella's secret recipe granulated sugar, this shop ensures castella of the highest quality.

Shooken was founded in 1681 in the middle of the Edo period. During its 300+ years of existence, this distinguished castella shop has witnessed Nagasaki's up and down, and baked the emotions of such events into delicious confectionary. Even now the shop still insists on hand-baking, with each craftman carefully and adeptly in charge of only one batch. The moist yet smooth castella will no doubt make your mouth watery.

Iwanaga Baijuken was esbtalished in 1830, though its current location only dated to 1902. The famous shop whose distinguishing feature is its Taisho-era ship-craft shop board also won Nagasaki City Landscape Award in 1996. Its applauded and mostly made-to-order castella is baked from diligently selected materials and rested overnight into a soft and springy goodness.

At Ijindo Magane-bashi branch shop, castella is an incredible artwork delicately crafted by each skillful castella artisan. From ingredient inspection to oven temperature, the shop makes various adjustments to perfect their craft everyday. Please enjoy the distinctive flavor typical of Nagasaki's confectionary culture which had lasted for thousands of years.

From its inception in 1624, Castella shop Fukusaya has preserved the traditional way of making castella. At this shop, each castella batch is managed by only 01 person, who does everything from egg beating, dough making to final baking. Do not forget to bring these moist and fragrant castella back as souvenirs!
